Warming soup season: Pea and Vegetable soup
There is one thing that hits the spot in colder weather like we are having now.. a bowl of warming soup! A hearty soup can feel like a warming hug from the inside.. 🫂
This post is all about the humble pea! Whilst pea and mint soup is a classic, we love giving it abit of winter warmth by adding grated ginger to the mix, and chilli flakes on top if you're after an extra kick! Recipe below..

Recipe:
- Chop up onion, potato and garlic.
- Warm up some oil in a pot, and shallow fry the above ingredients.
- Add a sprinkle of sugar, salt, and a warming spice like cumin seeds.
- Allow this to fry for a minute.
- Throw in lots of frozen peas, and stir.
- Add in stock and allow to simmer.
- Simmer for 30-40 mins, or until the potatoes are soft.
- Use a stick blender to blend it up.
- Grate ginger over the top and stir in.
- Top with a drizzle of single cream or creme fraiche (a lighter option) and a some basil leaves (optional).
Voila! The best part is can be made in advance, where it is ready for you for your post-class meal with a slice of chunky buttered bread!
Top tip: Freezing your ginger can be time-saving, and mess-saving! It makes it extremely easy to grate vs fresh ginger. And once done, just pop it back into the freezer for next time!
